ok so I am having a last min. dinner party (VERY small one at that) its just like three couples and my kids plus a newborn

anyway

I am making grilled salmon with twiced baked pototoes BUT i am not sure what else to serve with it. and I need something with color really. but was wondering if you guys had any ideas at all what else to put with it. when I have it just for my family we have corn with it but i am wanting something diffent than corn.

also anyone got any good dinner roll recipes? i am tired of mine lol

You've already got a starchy food with the potatoes so it seems like you need a green vegetable. Are you having a salad? I would also suggest asparagus. You can roast them in the oven and they're so good... it brings out the sweetness....

yes I am having a salad. I guess i should have mentioned that lol

how do you do the roasted aspr? I have never made it that way before i only know how to boil them...i'm not a real talented cook lol

I put the asparagus on a heavy cookie sheet and drizzle with olive oil. I haven't made them in a while but I believe I broil them until they start to sort of carmalize just a little. Then you can drizzle some lemon juice on them and maybe some salt when they're done. They cook very quickly so you have to watch them closely.

For the carrot rings boil them first them when cool not cold cut out the centre enough to hold bout two or three beans split one side and wrap around beans this always looks impressive you can also do this with asparagus.

When I make roasted aspargus, I use a cookie sheet, spread the asparagus out and use extra-virgin olive oil drizzled over the aspargus, then sprinkle some kosher salt and fresh ground black pepper. I roast it for about 7 to 10 minutes at 450 degrees. It is delicious and now I want some!!!

When I make aspargus I add sun dried tomato strips, pine nuts and garlic and sautee until done, but still crisp. Another really great veggie are Chinese pea pods. You can sautee them in a bit of EVOO and add water chestnuts for some extra crunch. My children love these (they are the only green veggie they eat). Another really easy one is edamame (soy beans in the shell). All you do is steam the pods (I buy mine frozen) and add a sprinkle of Kosher salt. Kids love to pop the beans out of the pods and into their mouths. And I like the soy estrogen benefit for my hot flashes!

How are you preparing the salmon? I have a recipe that makes a wonderful one dish presentation. Take plum tomatoes and seed and cube them. Set aside. Take one vadallia onion and finely chop, sautee them until slightly browned. Add one chopped fennel (looks like large bulby celery), carrots, clelery and tomatoes. Place the salmon, skin side down, on top of the veggies. Add enough dry white wine to cover. You can use chicken stock if you prefer. Cover the skillet and gently simmer until salmon is done. Salt and pepper to taste. Depending on thickness, this can take up to 15 minutes. Serve on a platter with veggies and sauce spooned over top.

edited: sorry, I see that you are preparing grilled salmon. Have you ever tried making it on a cedar or hickory plank? It makes for the most wonderful slightly smokey flavored fish. You can buy planks at most gourmet supply stores like Williams and Sonoma. I have found them at Bed Bath and Beyond and Macy's too. They are really nice and a bit different...plus you don't have to worry about the fish falling apart before you serve. I just bring in the plank and put it down on a larger dish.
