Here's an easy "Canine Carob & Carrot Cake" (I'd skip the Carob if I were you)
Preheat oven to 350 degrees F.
Ingredients: 1 1/2 cups all purpose flour, 1 1/4 teasp. baking soda, 1/3 cup butter, softened, 1/4 cup vegetable oil, 1 1/2 teasp. vanilla (optional), 2 eggs, 1 cup shredded carrots, 1/2 cup carob chips (available at local health food store)
Directions: Mix dry ingredients, cream together butter, oil, eggs & vanilla, stir in carrots & carobs if using, pour batter into a well-greased 8" x 8" square or 8" round baking pan. Bake for approximately 35 min. or until knife inserted in center of cake comes out clean. Baking time may vary in your oven.
Frosting you can mix cream cheese with some fat-free yogurt or carrot baby food to thin it and frost away.
